I am wondering what the egg white becomes as the chick is being formed? I thought the yolk was the food the growing chick survived on in the shell, but what about the egg white?

The primary purpose of the white is to protect the yolk, but both the yolk and the white or albumin serve as food sources for the developing embryo. Neither the yolk or the white "turn into" anything... they are the nourishment required to fuel the development of the chick. Also... It is the cytoplasm of the egg, which until fertilization is a single cell. It consists mainly of about 10% proteins dissolved in water. Its primary purpose is to protect the egg yolk and also to provide additional nutrition for the growth of the embryo, as it is rich in proteins and is of high nutritional value. Unlike the egg yolk, it contains little fat.

I lived in the US for 10 years and my wife is American, Eggs Is Eggs. Some are white and some are brown just like here.
