because i know this guy and i know this is stereotypical but hes a hairdresser and i dont know hes just really good looking and well groomed but he just stares at me non stop, and we chatted
breifly and hes really nice and kind of shy toward me, I just want to know if this means he stares so much because hes interested or would u just stare at a girl alot even though ur gay???

Lots of hairdressers are straight.
As for would a gay guy stare at a woman. Not in a sexual manner, but if the clothing was really striking (very British for example, or a flowing gown) I might stare at the clothing, which might give the wrong impression to someone who didn't know me.

It's also important to remember that sexuality isn't always clearly defined. It's possible for a gay man to be attracted to a woman, and vice verse.
So yes, it's possible there is an attraction. Doesn't make him any less gay (if he is at that).
Why not talk to him and start a friendship?

Something strange happened with me twice. I used to know 2 gay guys, whom have been gay all their lives and both felt attracted to me...They both ask me if I would spend a night with them.
They don't know each other and when I asked to one of them, how could him feel attracted to me because I am a women, he said, he didn't know why that maybe I am the kind of women he wish to be...I know its sounds strange but it seems to make sense. I remember also that one of them, on his way on make my mind to be with him, started to behave like a straight men and a little bit aggressive, like those macho men....of course, I didn't sleep with any of them and they felt cool about it too.
Maybe you are a reflection of what this gay guy wish to be as a women. Gay people, are very tune to beauty.
PS: Since them every time I see a men being too macho, I have the feeling that behind all that aggressive attitude it's a sensitive men, like a gay men.

sometimes the attraction is friendship, if you know he is gay, sometimes trying to start a relationship can be difficult and distrasous, (I did this with a woman although I was gay and knew other gay guys that did this, mostly curious and attempting to go in the closet and it usually ended in disaster)

First.. I'm gay and don't "stare" at anyone really...at least unless they ask me to.
Second...some guys (gay / bi/Str8) are attracted to beauty - man, woman, car, etc.
Maybe he thinks you're beautiful.
