I love the flavor of parsley. Yes I eat it... and especially enjoy it in the salad called Tabouli. You can purchase a box in the international food section of you grocery store. I make it as directed yet always add about 3 bunches fresh parsley chopped, 3-4 fresh tomatoes diced, about 5 green onions chopped fine, and a little fresh lemoin juice. It is SooooooooveryGood!

Parsley is also vitamin filled as a green leafy vegi and is said to freshen/sweeten the breath through the digestion process.
You may also find traditonal tabouli recipe at any of the recipe sites... I made this and had my 80 year old traditional all american guy try this and now he loves it and asks for it. I actually think I love the flavor of Tabouli the most the next day after it has been in the fridge for a while.... Kind of like turkey sandwichs the day after Thanksgivng...so good.

Not by itself, but in other foods I do. Like when I make German Potato Salad, it calls for parsley and I put it in there and eat it.

parsley is just an herb to enhance the flavor of the food your cooking with it. It is not supposed to eat it by itself.
