Ethan is way too popular, but would be great as a middle. Evan and Ethan are very similiar, and it's really a tie on which has a better sound. Choose the name you personally like better. IMO, I don't feel that either names go well with Rocco. Rocco is a strong Italian name that has not yet become Americanized because it's rarely used. It would be better paired with a name like "Mario" or "Anthony", "Dante", "Giovanni". Or more simple names, like Rocco James, Rocco Michael seem to be a better match..Evan and Ethan are very English modern, maybe even Irish/Welsh. Not good mates with Rocco.
Btw, I personally don't think Rocco (and the inevitable nickname of Rock) is very flattering or attractive for a boy or man. I do love Evan, and its not too popular, but that's my style. You are entitled to your own too, but I would just consider the feelings of the child too. Rocco may be a little too off-beat, or too "rough and though" sounding to actually bestow on a child. PS. The only Rocco I have ever heard of was a 60 yr old immigrant who owned a pizza parlor and his name was Rocco.
