There is Lord Asriel's daemon- a snow leopard in Phillip Pullman's "His Dark Materials" trilogy.
This is a brilliant series which I highly recomend checking out if you are a fan of the genre.

Sherrilyn Kenyon does a series called Darkhunter, with were-leopards as minor characters and the occasional novel with one as a major character. They are quite readable and has a very strong fan base.
Were-leopards are also in the Anita Blake series. Feature heavily as the series develops.
Christine Feehan has a series called the Leopard series as well but I haven't read them.

Well, there is always the great movie "Cat People" staring Nastassja Kinski & Malcolm McDowell, directed by Paul Schrader. It's about 'the last of their kind', people who turn into leopards and can only 'mate' with one of their own. Great soundtrack, too, with a haunting David Bowie song.
