He didn't actually die. They wanted him to be eaten by the Kraken so Davy Jones would stop killing everyone else because Jack Sparrow had a debt to pay Davy Jones. Don't worry, he'll be back in the third movie.

He didn't die. He as sent to the the worlds end. If you remember at the end of the movie, they brought the old captain of the black pearl to go and get him back. Now in 3 they go get him. Thre won't be a part 4
