How is this possible and besides cost why could one not create some sort of combustion system using this method?

I think it's hydrogen in the presence of oxygen. In order to create hydrogen you either need to crack hydrocarbons (wasting energy), or electrolyze water (again, requires electricity which is inefficient unless you use solar power and then it gets really complicated).

I am not sure this is relative, but hot platinum wire can be used as an element of a combustible gas detector. Combustible gases decompose on the wire, creating additional heat. The heat causes increased resistance in the wire, and this resistance difference is displayed as a percentage of the lower flammable limit for that particular gas.

Hydrogen ignites by contact with platinum, but Y don't know much about the details.
