According to Future Trunks, during the Future Trunks Saga or the Cell Saga, it was a 'night of passion', he tells Goku.
After that, it's never really specified. They're just together. It just kinda happens.

Bulma had a terrible fight and heat arguement with Yamcha, they broke up shortly. Bulma was lonely and she found Vegeta a dedicate man who always trained in the capsule to make him stronger and prepare for the androids. Both of them felt for each other's needs so that's how they got to together.

Vegeta was teleported back to Earth due to Goku's wish and stayed at Capsule Corp. While waiting for Goku's return he and Bulma became attracted to each other. They had 2 children, Trunks and Bra.

I think what happened was Vegeta went over to Bulma's house cause the whole gang did, and they had that yell at one another relationship and I don't know next thing you knew they had Trunks! lol

During the gap because DB and DBZ lots of things happened that were not explained in the anime.
Just like things happened between the different period in DBZ : between Freezer and Cell and then Buu trilogy. In fact during these few years, it allowed the authors to bring new characters without having to spend episodes on them and how they arrived there.
