When the milk completely separates and you have that thick stuf at the bottom. don't drink it.
And for those of you that love the whey rich creamy taste of butter milk(especially with those small bits of butter in it) Do not ever buy "cultured" buttermilk. it is made for cooking. Stay with the "Natural" buttermilk. The difference between the two will show when you don't get belly aches from drinking too much. Also "cultured" buttermilk can lead to digestive disorders like acid reflux or constipation problems.

I love buttermilk. I usually go by the expiration date, or when there are too many clumps and the milk starts just tasting bad. Anyone who loves buttermilk knows that is has a distinctive yet tasty flavor. Truly rotten food tastes gross in general.

You should know, if it the kind you like, it does get a REALLY sour taste and nasty smell when it is bad.
