What event in history caused the word " upset" to be considered a win by the under dog?

People used to say it was because of a horse race, and the horses name was upset in 1919. But someone disproved that and traced the word being used in that way back to about 1865...and i don't believe they ever found a specific event that caused the word to be used that way.
