Staying in the Bellagio? I will take it as if you are already there:

At the bellagio:
-first off, there are many great things to do IN the bellagio. Check out the world's largest chocolate fountain (near the elevators up to the rooms) at Ghirardelli.

-Bellagio also has tons of upscale shopping if you are into that.

-Of course the water fountains outside the Bellagio is something you aren't going to miss if you are staying there.

South strip from Bellagio:
-head to my personal favorite casino, NY NY, and check out the piano bar (the Bar at Times Square). Probably some of the best dueling piano anywhere. Get there early, as there are very few tables and they go fast.

-while in New York, if you are into bars, check out Nine Fine Irishmen. My favorite bar. Very much what you would expect from a typical irish pub (albeit a little more upscale).

-there is also an ESPN zone there if you need to get some souveneirs for family.

-across the strip from NY NY is MGM grand. They have this thing there where you can go in and be part of a focus group for things like new pilots or sometimes its food they want you to review.

-right next to MGM is the M&M store where you can get a lot of souveneirs for the kids on your list.

-continuing north up the east side of the strip, try the Spice Market Buffet at Aladdin (now called planet hollywood maybe?). Probably the best buffet in town for the money. The Bellagio has a better one, but it is like $45/person. Spice Market will run you $20.

North strip from the Bellagio:
-check out the Harrah's "party pit" between Harrah's and Imperial Palace. They always have some concert going, and its a pretty good atmosphere.

-you can get gondola rides at the Venetian, so if you have a significant other you might consider that.

-Caesar's Palace is just north of the Bellagio. There is more shopping there at the forum shops. Also, i highly recommend a frozen margarita that comes in the shape of a life-sized football. It will run you $20, but you'll be nicely buzzed afterward.

-The farthest north you really want to go is Wynn. But you definetly have to check Wynn out. It's one of the most lavish hotels in the world. The sports book is ridiculous, with $1000 leather chairs at every single station.

-North of Wynn on the strip is pretty questionable as far as fun goes.

Downtown:
-Downtown is one of the jewels of Vegas. You can have a very good time for cheap down there if you play your cards right.

-Check out $9.99 steak/lobster after 9pm at Tony Roma's right across from the Four Queens. $1 margaritas are also ubiquitous downtown.

-If you venture to Main Street Station (northwest downtown), there is a very good brewery inside, called Triple 7 brewery. They brew their own beers there and have very good food. After midnight, you can get microbrew draws for a $1. I'm talking full 16 ounce glasses, you can't beat that anywhere.

-Also, get in on a game of poker at the "home of professional poker", Binion's. They do very reasonably priced tournaments daily (usually $75 buy-in, with re-buys) and they usually only have 70-80 people in them, but first place pays out $2500.

Gamble. And go on that rollercoaster on top of the tower.
Oh, and take some booze for your room because the Belagio has no mini-bar.

Do not avoid the smaller venue's, smaller casinos. My experience they have better service than the mega huge ones.
On the strip your just another ant in the crowd.
