I think that you should go with, a Valentine's Day teddy bear (small enough that she can sit on a shelf or bed or something) and if possible stick the card in its arms and find the *perfect* card. Nothing too mushy, the teddybear is enough cliche for one holiday, get one that somehow relates to how you know/met/like about her but preferably in a non-offensive humorous way (not as difficult to find as it sounds). Then write something sweet on the inside to either let her know you like her if she doesn' t already, or re-emphasize what you like about her. But make sure and don't overdo anything b/c you don't want her to feel bad about what she got you (if anything) and you don't wanna freak her out LOL
PS- rather than chocolates you could buy her some sort of candy (or food if she's not into candy) that she likes so it means more and it shows her that your paying attention to what she likes and says

Give her 11 roses and write a note to tell her to look in the mirror
and she will see the most special rose and that this is the rose

A gift basket full of little things... chocolates, conversation hearts, a stuffed animal, some Hershey's kisses, 1 or 2 small bottles of her favorite soda, whatever else you think she might like. Gift shops tend to have this stuff for the holiday.
But then the Roses and box of chocolates is always welcome too.

How about something that will allow you to pamper her without you having to lift a finger? Get her a gift certificate for a manicure or a pedicure or a facile or the whole works trust me she'll love it and you!!

Get her something she likes. Not something she needs. Cause you might end up offending her.
Eg. If she is a big lady, don't get her a book on how to lose weight. You'd be very lucky if she ever spoke to you again after that.

Well whatever you decide to get her.... make sure you do ONE thing...................
Make her feel like the love of your life for the entire day. Make her feel like you are really getting in to the "Valentines Day" mood, that you are so happy to be aable to express your feelings to her on this special day...
Make her feel special.... not like you just bought her something cuz that's the thing to do.
