im not sure whether to take italian for a full 4 years in high school or take a different elective

Most colleges require at least two years of a foreign language at most. 4 years of Italian is a wonderful choice, it's great to be fluent in a language. At the same time, two years of Italian and two years of another language will make you look appealing because you know two languages as opposed to only one. Either way, college will be impressed as most people go for the minimum two year requirement and drop language altogether. If I were the college admissions rep I would be very excited to accept someone that knew two different languages as opposed to only one, it broadens your appeal at the post-college level.

If you take the 4 yrs, you may be able to test out of the languages in college. However, that would do you no good if your college didnt offer Italian. It's been my experience that colleges really dont look at *what* you took so much as how well you did and what program you were on. I graduated distinguished with AP/Honors courses. The college cared a lot more about that and my GPA/ACT scores than they did the actual classes I took. So take what you want.

In terms of foreign language, they definitely like to see a full 4 years. To a college, foreign language is more of a core course than an elective.

If you take the full four years you can get out of the language requirement in college and graduate a little bit quicker.
