The trolls wanted to know if there were anymore "burahobbits" around (when the Trolls asked Bilbo what he was, he started to say 'burglar' and then changed it to 'hobbit' in the middle). And then one of the Trolls suggested letting the "poor little blighter" go, and the Trolls started fighting among themselves. Then the dwarves came and were captuered and Bilbo ended up in the top of some bushes, where he didn't dare to move for fear the Trolls would hear him.

Gandalf kept the trolls fighting until dawn when they all turned into stone:
"''Dawn take you all, and be stone to you!' said a voice that sounded like William's. But it wasn't. For just at that moment the light came over the hill, and there was a mighty twitter in nthe branches. William never spoke for he stood turned to stone as he stooped; and Bert and Tom were stuck like rocks as they looked at him. And there they stand to this day, all alone, unless the birds perch on them; for trolls, as you probably know, must be underground before dawn, or they go back to the stuff of the mountains they are made of, and never move again. That is what had happened to Bert and Tom and William.
'Excellent!' said Gandalf, as he stepped from behind a tree, and helped Bilbo to climb down out of a thorn-bush. Then Bilbo understood. the sun. the sun's light turns the trolls into stone. after the trolls caught Bilbo they argued about how to cook him for so long and did not realize that the sun was rising. when it did the trolls turned to stone allowing Bilbo to escape.

The trolls start fighting among themselves about the best way to cook the captives (helped along by Gandalf's ventriloquism) and they lose track of the time. The sun comes out and turns them to stone.
