It is like happiness, a noun that basically exists only as a singular. To use it as a plural as in "the one-of-a-kind sculptures are listed in the program using their uniquenesses as criteria" seems kind of awkward.

You have the correct spelling - "uniqueness". This is both the plural and singular form. It can be modified by a pronoun to indicate whether it is in the plural or singular form.

uniqueness is correct. It does not have a plural.

uniquenesses? is that what you're asking? because unique is an adjective so it doens't have a plural...?
