You never see the full crash but yes most of it is in season one.
However a lot of the finer detail is in season two.. the two go hand in hand and you really need to buy both to understand the story.

You see the crash from Jack, Kate and Charlie's perspective in the Pilot of season 1, but only from the inside
You see the back half of the plane crash on the season 2 premier
I think that you see the plane going down from the others' perspective at the season 3 premier, but i could be mistaken as I've only seen that particular episode once

Mostly from the inside of the plane. The best external shot of the plane crash is the opening sequence of "The Other 48 Days" in Series 2 (although I haven't seen series three yet, and can't comment on this).
