I don't know for sure, but I'm quite confident, that this is the explanation:
The roots of modern science are to be found in the Renaissance, when people actually became curious about nature (and other things for that matter). Latin was the lingua franca of science at that time (probably bacause the monks, which were the scholar authority in the middle ages also used latin and the use of latin perpetuated in universities and because the renaissance was strongly oriented towards the roman classical ages). Every well educated person could not only understand it, but also write it. Books were mostly written in latin, if they were to be known across the scientific community.
It was also very common to latinize it's own name, which demonstrates the importance of this language. For example, Carl von Linné which also called himself "Carolus Linnaeus". He is the founder of the binomial nomenclature in biology. This means every species is defined by a genus name and a species name (for example "rattus rattus" is the rat, "homo sapiens" is the modern human, "Pan troglodytes" is the common chimp etc.). You notice, that those species names are latin, too.
Latin has been the main language in science since the 19th century, i think. It was then replaced by french and english. Today english is the language every scientific should know to access a wide audience and publishings.

Not a bio student....but I guess one reason could be because the ancients who initially developed the science spoke only Latin...therefore they named everything in Latin. Scientists today just follow that tradition I guess. Plus, the English language too greatly derives from Latin....biology, physics, psychology etc are all words that have their root in Greek or Latin.

1) Latin words have very descriptive meanings so they are good for expressing colors or characteristics.
2) Latin is a "dead" language. It is no longer spoken by a nation so it does not change. (Think of all the new English words we add to out language each year.)
3) Latin words have strict rules about prefixes and suffixes added to words to help change their meanings.

Because the Romans were the first great civilization to categorize and record the sciences therefore there is a lot of Latin involved.

probably so all the world can get a sense of what different countries are talking about.
its an old language and they probably did a lot of biology first
it was main language root of western eur. which was industrialized.. and advancing in science and other things
