If I remember a lab correctly, it softens the shell into a thin membrane. If you add food coloring to the water, the membrane absorbs it and the inside of the egg turns to that color because of osmosis.

due to OSMOTIC PRESSURE!

The shell of the egg is quite porous!

If the water it too much saline/salty in order to balance the osmotic pressure created due to the excess concentration of salt ,water from in side the egg comes out and the egg shrinks.
(Its real.....try to squeeze an egg after keeping in salt water through a bottle neck!)


If the water it too much pure in order to balance the osmotic pressure created due to the less concentration ,water from outside the egg goes into and the egg and it breaks while swelling.( although it should occur theoreticlly but doenot happen)

it cause the liquid from inside the egg to leave.
(a salt solution is hypertonic compared to the egg)
