Besides home ec, take business and marketing classes, math, and a foreign language (preferably Spanish). And take a lot of English writing classes.
A chef is not just a glorified cook, they run the place and have to have a lot of business sense for cost control, payroll, inventory, etc...

Well, I would definitely suggest taking French because chefs should know French since so many cooking words are French.
Also, I know the Art Institute (which has locations all over) has a program in the culinary arts, and it's only two years.

Don't know about schools in WI or MI, but Florida has an excellent culinary school and I believe Texas does also.
