It really does depend on the weather and the team. NFL home teams are allowed to pick the uniform they want to wear and the visitor has to wear the opposing color. Most times an NFL team will choose to wear their darker colored jerseys in winter if outdoors because it absorbs the heat from the sun better than white/light colors, but Arizona has been known to make opposing teams wear dark colors in the early september games to make them dehydrate faster. Also, each NFL team can choose to use their alternate (third color/design) team jerseys once a year.

The home team chooses. Cowboys always opt for White, Raiders always choose dark, if the Raiders were playing at the Cowboys The boys might wear the dark so the Raiders have to wear white and so for every team. NHL just changed so the home has to wear dark

The home teams always wear their darker uniforms (other than Washington and Dallas). The reason being is that they wanted to give the home teams a somewhat slighter advantage due to the ball would be harder to see when a person with a darker uniform is holding it rather than a person with a white uniform.
