The Elven spoken parts are what I love the most, it doesn't matter what they are saying it always sounds beautiful.
There are many lines from the Lord of the Rings trilogy that I like, but these are the ones that mean the most to me.

Sam: [after fighting Shelob, and seeing Frodo wrapped up] Oh No! Frodo... Mr.Frodo wake up... Don't leave me here alone. Don't go where I can't follow... Wake up.

Sam: [about the ring on the slopes of Mount Doom] Then let us be rid of it... once and for all... C'mon Mr. Frodo... I can't carry for you... but I can carry you! C'mon!
[Picks Frodo up and starts to carry him up the mountain]

Gimli: [about to fight all of Mordor] I never thought I'd die fighting side by side with an elf.
Legolas: How about side by side with a friend?
Gimli: [pause] Aye. I could do that.

Aragorn: Hold your ground, hold your ground! Sons of Gondor, of Rohan, my brothers! I see in your eyes the same fear that would take the heart of me. A day may come when the courage of men fails, when we forsake our friends and break all bonds of fellowship, but it is not this day. An hour of woes and shattered shields, when the age of men comes crashing down! But it is not this day! This day we fight! By all that you hold dear on this good Earth, I bid you *stand, Men of the West!*

[after Legolas single-handedly takes out an Oliphant and its drivers]
Gimli: That still only counts as one.

Frodo: [after destroying the Ring] I can see the Shire. The Brandywine River. Bag End. The Lights in the Party Tree.
Sam: Rosie Cotton dancing. She had ribbons in her hair. If ever I were to marry someone, it would have been her. It would have been her.
[sits down and begins to cry]
Frodo: [leans over and hugs him] I'm glad to be with you, Samwise Gamgee, here at the end of all things.

Pippin: I didn't think it would end this way.
Gandalf: End? No, the journey doesn't end here. Death is just another path... One that we all must take. The grey rain-curtain of this world rolls back, and all turns to silver glass... And then you see it.
Pippin: What? Gandalf?... See what?
Gandalf: White shores... and beyond, a far green country under a swift sunrise.
Pippin: [smiling] Well, that isn't so bad.
Gandalf: [softly] No... No it isn't.

Pippin: But we'll see each other soon. Won't we?
Merry: I don't know. I don't know what is going to happen.
Pippin: Merry...
Gandalf: Run, Shadowfax. Show us the meaning of haste.
Pippin: Merry!
[Shadowfax gallops off, carrying Gandalf and Pippin away]

Gollum: They cursed us. Murderer they called us. They cursed us, and drove us away. And we wept, Precious, we wept to be so alone. And we only wish to catch fish so juicy sweet. And we forgot the taste of bread... the sound of trees... the softness of the wind. We even forgot our own name. My Precious.

After Gandalf falls in the first film and the Company proceeds to Lothlorien, Sam attempts to speak a poem in Gandalf's honor. Sam thinks it is rubbish in comparison to the Elvish song, but I think his attempt was heartfelt.

Also, I like Sam's monologue at the end of the Two Towers when they're in Osgiliath.

In my opinion the best from the movies. The first is my favorite

Frodo: There’s something down there!
Gandalf: It’s Gollum
Frodo: Gollum?
Gandalf: He’s been following us for three days
Frodo: He escaped the dungeons of baradur?
Gandalf: Escaped? Or set loose? Now the ring has drawn him here. He will never get rid of his need for it. He hates and loves the ring as he hates and loves himself. Smeagols life is a sad story. Yes. Smeagol he was once called. Before the ring found him. Before it drove him mad.
Frodo: It’s a pity that Bilbo didn’t kill him when had the chance.
Gandalf: Pity? It was pity that stayed Bilbo’s hand. Many that live deserve death and some that die deserve life. Can you give it to them Frodo? Do not be too eager to deal out death and judgement. Even the wise cannot see all ends. My heart tells me that Gollum has a part to play yet for good or evil, before this is over. The pity of Bilbo may rule the fate of men

Frodo: I wish the ring had never come to me. I wish this had never happened.
Gandalf: So do all that live to see such times. But that is not for them to decide. All we have to decide is what to do with the time that is given to us. There are other forces at work in this world Frodo besides the work of evil. Bilbo was meant to find the ring in which case you were also meant to have it. And that is an encouraging thought.

Sam: Frodo!
Frodo: No Sam! Go back sam! I’m going to mordor alone!
Sam: Of course you are! And I’m coming with you!
Frodo: You can’t swim! (sam struggles) Sam!
Sam: drowning*
Frodo: Sam!
Sam: drowning*
Frodo: A made a promise mr. forod. A promise don’t you leave him samwise gamgee. And I don’t mean to. I don’t mean to
Sam: oh sam (embrace) come on

Sam: I wonder if we will ever be put in to songs and tales
Frodo: what?
Sam: I wonder if people will ever say I want to hear about Frodo and the ring? You know this is one of my favorite stories. Frodo was really courageous wasn’t he dad? Yes my boy. Most famousest of hobbits. And that’s saying a lot.
Frodo: you left out one of the chief characters. Samwise the brave. I want to hear more about sam. Frodo wouldn’t have gotten far without sam.
Sam: Now mr. Frodo. You shouldn’t make fun. I was being serious.
Frodo: So was i
Sam: Samwise the brave. (to himself)

Pippin: I didn’t think it would end this way.
Gandalf: end? No the journey doesn’t end here. No, death is just another path. One that we all must take. The gray curtain of this world rolls back and everything turns to smooth glass. And then you see it
Pippin: What? Gandalf? See What?
Gandalf: White shores. And beyond, a far greater country, and a swift sunrise
Pippin: Well that isn’t so bad
Gandalf: No. No it isn’t.
Frodo: I can’t do this Sam
Sam: I know. It’s all wrong. By rights we shouldn’t even be here. But we are. It’s like in the great stories Mr. Frodo, the ones that really matter. Full of darkness and danger they were. Sometimes you didn’t want to know the ending; because how could the end be happy? How could the world go back to the way it was when so much bad had happened? But in the end, it’s only a passing thing. This shadow, even darkness must pass. A new day will come. And when the sun shines, it will shine out the clearer. Those are the stories that stay with you and meant something. Even if you were too small to understand why. But I think Mr. Frodo, I do understand. I know now. The folk in those stories had lots of chances to turn back, only they didn’t. They kept going. Because they were holding onto something.
Frodo: What are we holding onto sam?
Sam: That there is some GOOD in this world Mr. Frodo. And it’s worth fighting for.

Sam: Do you remember the shire Mr. Frodo? It will be spring soon, the orchards will be in blossom, and the birds will be nesting in the hasel thicket, and they’ll be sowing the summer barley in the lower fields, and eating the first of the strawberries with cream. Do you remember the taste of strawberries?
Frodo: no sam. I can’t recall the taste of food. Nor the sound of running water. Nor the touch of grass. Naked in the dark. Nothing, no veil between me and the ring of fire. I can see him. With my waking eyes.
Sam: Then let us be rid of it. Once and for all. Come on mr. Frodo. I can’t carry it for you, but I can carry you. Come on!

King witch of angmar: Feast on his flesh
Eowyn: I will kill you if you touch him
King witch of angmar: Do not come between a nasgul and his prey…You fool. No man can kill me. Die now.
Eowyn: I am no man.

Gimli: [about to fight all of Mordor] I never thought I'd die fighting side by side with an elf.
Legolas: How about side by side with a friend?
Gimli: [pause] Aye. I could do that.

Plenty to choose from...

but one of my favorites...from Return of the King...

Sam: What are you up to? Sneaking off, are we?
Gollum: Sneaking? Sneaking? Fat hobbit is always so polite. Smeagol shows them secret ways that nobody else could find, and they say "sneak!" Sneak? Very nice friend. Oh, yes, my precious. Very nice, very nice.
Sam: All right, all right! You just startled me is all. What were you doing?
Gollum: Sneaking.
