There are far too many for me ( 400 differents series / OVA / Movies seen ). But an anime I would never forget would be an anime I can watch again and again without getting bored. In that case there would be : Kiddy Grade, Full Metal Panic, City Hunter ( French dub ), Gungrave, and a few others

Ufo Robot Grendizer, that literally changed Italian television forever, back in the seventies; then a couple of years later came Gundam: young viewers in 1980 where struck by it's more realistic approach to both character and mecha development and such issue as the portrayal of a war, compared to every other giant robots animes; and Lady Oscar (Versailles No Bara), set in pre-rivolutionary France which introduced both young girls and boys to historical romantic drama :)
Oscar's still able to challenge Dragon Ball, in polls in Italy...
