Human is usually a term to describe the species that we are, ie. Homo Sapiens. It is often used when describing our genetic make-up, and other biological matters.
The word 'man' in the same context usually refers to our culture and history. When we talk of mankind, we talk of a race who have built cities and cultures, and explored the world etc.

"man" denotes a gender or sex, while "human" denotes the species. Websters defines "man" as "an individual human". So essentially, it's a subcategory of the species.
