Clifford Geertz, Victor Turner, and Mary Douglas (the foundational theorists in symbolic anthropology) can be studied in any department of anthropology or any department of religious studies at any decent university.

Symbolic anthropology is not always one course by itself. Rather, these theorists are studied in various classes, in various contexts. For example, in my department (of comparative religion) they are thoroughly covered in the "Methods and Theory" course, and their work is studied in various other classes as well.

For example, Douglas always comes up in any courses that examine ritual, as well as occasionally in courses in the interpretation of Hebrew Scriptures. Geertz comes up in any course dealing with ethnology, and in some courses dealing with Islam. Turner is also normally covered in courses on ritual, and also in courses on African religions.

I hope this helps!
