I can touch the rim on a good day, despite being only 5'8", but about how much higher would I need to get to dunk?
My hand is pretty small...which is nothing to be proud of but I though that it might factor into the equation...

If you're 5'8 with small hands, you would need about 7 inches over the rim to do an unassisted one-handed dunk, if you get lucky. To be able to do it consistently/on command you'd need 8+ inches; with 7" you'll get some sloppy ones sometimes.
Now, if you have someone stand in front of the rim and throw it up right in front of it for an alley-oop, you could get by with 6 inches.

You would need to get about 5 inches above the rim for a simple 1 handed dunk.

You're gonna have to get your hand up above the rim a good 8-12 inches.

When you can touch the rim with your forearm. Since your hands are small you'd probably have to work on cupping the ball versus palming it.
