How do you replace a stuck shower head?

If its an all metal assembly, then you can gently heat the fitting on the shower head, with a candle, or soak it in a rag dipped in hot water... Or Better yet, just simply run hot water through it.

Heating the fitting cause it to loosen enough for you to remove the stuck shower head.

Wear Gloves, and be carefull !

By meaning stuck I suppose you mean you can't get the shower head off of the wall pipe. I would run the hot water for a while then tun on the cold water and use pliers or a pipe wrench to loosen it.
