The web site for a popular rinse aid says it "reduces surface tension", not sure what this means or what is in the product...

By reducing the surface tension it allows the water to run off the items easier, it also has a glycol/ether base product in it that promotes drying for quickness and lack of stains.

I am sure that you have seen water droplets bead on a slick surface. The rinse agent affects the water so it cannot bead but just run off leaving your dishes spot free. If the water droplets are allowed to dry on the dishes it would leave any minerals contained in the water as spots.

Almost all modern dishwasher detergents(even the generic or store brands) have rinse agents built into them already lessening the need for a separate rinse agent.

Its basically a wetting solution that reduces the surface tension of water and allows it to flow off the dishes.
