Gas! You can control the heat very quickly. I will NEVER go back to an electric stove again. Gas, whether it be Natural or LP, is the way to go.

Use the specifications for each type in combination with the utility rates in your area. I prefer gas...when it is off, it is off. Chances are that the difference is very slight unless you do a lot of cooking. Professional cooks use gas.
