Not usually anything except to show borders of nations.

However, groupings of countries - such as the British Commonwealth are often the same colour (yes British spelling of color).

Australia, Canada and Great Britian for example, are typically all the same colour on a world map.

One could easily ask as well why North is at the top. You can get maps with the South pole at the top... makes the world look quite different

If you are talking about a political map (as opposed to a geographical map), there is no purpose at all. They are only used to help signify the borders between different countries. I believe they only use 6 colors (not sure though...). Mathematically, you only need that many colors to ensure that no two adjacent countries (states or provinces) share the same color.

Each individual color on a political map has no particular significance. Some bright guy just figured out that with four different colors it's possible to have each country a different color from those it borders.

but if u mean geographic map..den use the legends..
