I drove up to San Francisco from Orange County taking the five and I just loved all of those groves of trees that were all over the place for nearly the whole trip. They had dark bark at the trunk, and then the branches were almost reddish-looking but they turned grey right at the top. They weren't very tall and it was winter so they had no leaves. Any ideas?

I have no idea. At first i thought you meant the Eucalyptus trees but just found out they keep their leaves in winter. Here's a site that lists all native trees to California and shows pictures of them. Maybe you will find them there. But one question that may help in figuring them out is "Was there a scent to them?" like did you smell ceder or pine? or even cinnamon?
