Go to start > All Programs > Accessories > System Tools > Character Map. Most fonts have a set of Greek letters, and you want to use a font that is popular so that other people who view your profile will be able to see them. (If you use a font that is something other than the popular ones, it is possible that the people who will view your profile don't have that font installed and will only see a set of squares instead of letters)

In your character map, choose the font you use (I recommend Times New Roman) and scroll down a little bit. you will see the Greek alphabet. You can then select a character, it will appear in the box below, then simply click the 'copy' button, and you can paste it into your AIM profile.

what I'd do is copy-paste the character you want into it, but I've never changed my AIM profile so my opinion doesn't count D:

to find the character you'd probably look the name up on wikipedia and copy.
