Go to www.cs.wisc.edu/-glesener/
stereograms
This makes a nice project. It is of stereograms. Pictures with hidden pictures in them. You relax your eyes to see them, and it can sometimes take a bit of time before you see them.
If you have a good color printer you can download the pictures to place on your exhibit. This is a good project, it is colorfull and people crowd around to see if they can relax their eyes to see these. And of course judges like to award the good grades to the most popular exhibits.
Now of course you need to find out why some people can relax their eyes and why some cannot. It would be good to have a poster of the eyeball with lines pointing from the muscles to a line on the poster where you would write the names of the muscles. See also eyetricks.com for reasons some people can see these easier than others.
