Most Buffalo Motorcycle jackets are actually water buffalo (which is NOT american Bison).. and they are generally thicker and heaver than cowhide in my experience.. better if you go down IMO

If you are buying for riding, ignore the leather and look at the protection on impact. The leather is going to be there till you stop unless it's pleather or faux leather. The big issue is the padding and the back protection. Buffalo leather while thinker and more restitant doesn't move as well as cow leather to start. Being more restrictive may cause you to be delayed in your actions till you work the jacket in. Buy based on fit and protection inside, the leather is going to help in a fall but it won't save you completely.

'Fraid I don't know much about buffalo, I've heard it's more supple.
There are differences in leather. Cowhide, as you know is rather strong and tough. Deerskin and goatskin are thin, soft and supple. Great for summer gloves. Pigskin, a fine grained leather, is tough and abrasion resistant. Also, it will dry without stiffening or shrinking.

Leather is not all the same. Deerskin is best for motorcycle jackets. It is lighter, more supple, and more abrasion resistant.
