a refridgerator is too dry for long-term storage. best place is in a cool cellar. if you dont have a root cellar, put them in an outside corner of your basement in burlap sacks. once the eyes develop, you can still eat them, but when the sprouts on the eyes get to be over 1/2 inch long then the potato will begin to dehydrate and get shrivelled and then they become inedible. the best storage temp for potatos is between 5-10 degrees celcius. 40-49 F.
if you live somewhere where it doesnt freeze or just barely freezes, you can keep them in a garage or storage shed.

Store potatoes in a cool (not cold), dark place. They can be refrigerated, but that will make them get soft and spoil faster than if you don't.
Eyes aren't a problem - just cut them off and the potato should still be fine, as long as it's firm and not rotten of course!

You can store them in a frig and they will last longer then during the summer months then if you don't have a cool place to store them. Before using, check for the softest ones first and if they aren't too soft use them and if they are, throw those away and take the firmer ones.
The eyes can be cut out no problem.

put them in a cool ... not freezing room away from lights and not in the fridge... that speeds up the rotting process. and yes you can eat them after eyes develop... just peel first
