i used to work at a big hotel in brighton just over a year ao - for the best price, you need to go to the desk and book in advance BUT what i aways advice people to do now (hense learning for hotel experience) is book online at www.lastminute.com - you may have seen the adverts but they do some really good deals - i.e when we were selling standard rooms for £100 per night, customers were walking in with email confirmation of bookings costying as low as £19 INC BREAKFAST!!!! ... im not sure how far you need to book in advance and it highly depends on which day you are staying.... nowerdays most hotels in brighton sell at a 2 day min stay at weekends normally at quite a high price.... (i.e. fri and sat night)....
If you are staying in the week i advice you phone a few hotels in advance and ask their valability... if they have lots left, i personally would wait until the day then try bargin with the guy on the desk - at the ned of the day its all down to avalibility and if they still have rooms left on the day, we used to sell them for £20!!!
try quality hotel brighton - not great rooms (in size) but if you can get a good deal ian ts worth it (especially considering we used to sell them for £145 on a sat night if some were left over)!!!
hope thats of some help

I think you will find that anything for £25 per night will be a real doss-house. Add another tenner and you might be lucky.
Try Ainsley-house hotel. It's not far from the pier. As it's off season, they may give you a discount.
Good luck!
