The graphics card is the component used to display images to your monitor. It is used more than just for games. Without the graphics card, there is no output to your monitor. Back in the old days, we used to call these things "video cards", which made it more obvious as to what these things do.
Now different graphics cards have different capabilities. Some graphics cards, as an example, cannot support games that uses DirectX8 and above. Some graphics cards support multiple monitors; others do not. Some graphics cards can do full-scene antialiasing; others do not. The capabilities of the different cards can vary; and how well they do it also varies.
Wikipedia has a brief description on what it does: http://en.wikipedia.org/wiki/Graphics_card

Better graphics cards don't just speed up games, they allow you to see things in games that you wouldn't be able to see with older cards. Games are designed with a lot of extra features like shadows, and shaders and 3D capabilities, etc. The better the card, the more you can see the game as the designs really intended it to be seen.

Another advantage is that graphics cards have their own processer..thus freeing up clock cycles on the main cpu. This in effect will speed up your computer during any graphic intense usage..such as games..etc..

Graphics card also known as GPU, which is graphical processing unit, it processes your graphics and shader model and pixels to shade.
few gfx cards having video encoders in it like Radeonx1300 or x1600 that provides u to encode a video using graphics card's memory, and it also works as a video codec to play video files,
GPU can process antialiasing with many qualities.
