A stage hand is a crew member on a production. They can do a multitude of actions, depending on the size of the show and what their track is. For example, there are riggers (or flymen), props track, sound, carps (moving scenery), followspot operators, head electricians, etc. Each role performs a different function for the show. Stage hand is often confused with stage management (or assistant stage manager). They are not the same. ASM's generally oversee the stage hands and ensure that all the necessary things are being done so the show goes smoothly backstage.
Props. That's a little vague. There is a property master (the person who is in charge of ensuring all props are on deck and preset accordingly), there is a props designer (the person who designs the props needed in accordance with the script and design of the show) and then there is the props builders (the persons who physically build or find the needed props as per the production needs). Sometimes all these roles are rolled into one on smaller shows.
Props themselves are any physical item (that is not worn by a performer) that is used, carried, brought on and struck on and off deck in any given scene.
Hope that helps.

Stage Hand is the person who helps out with all the little tasks that need done. Props Master is the person who comes up with what the Character will use in the Scene.

The answers above are good, but I wanted to point out there are two types of properties:
There are "scenic" properties - more scenic elements than anything else, like a broom or a bucket or a telescope
and there are
"Costume" properties - which are things like watches or hats or umbrellas that may be worn and then left on stage.
