When writing in Word, how do I set the font to ALWAYS be Aerial unless I manually change it? Often, font switches to the smaller, less preferred Times New Roman.

In Word, go to your Format menu > Font. Then select Arial, the size you want, and at the bottom of that box there is a button that says "Default...". Click it and it will ask you to confirm that you want to set that as your default font.
