I believe that refers to the number of cylinders an engine has. Most regular vehicles you see usually have a V6, or 6 cylinders. However the higher the cylinder, the more power.

The number is the number of cylinders they have, the V refers to the configuration of the engine, where they cylinders are in two rows that are lined up like a V. (Think also a V-twin motorcycle engine). Other engine configurations are inline, which is popular with smaller car engines, rotary, WWII airplanes, and pancake, which is common in smaller modern aircraft engines.
