While listening to Mew's "The Zookeeper's Boy" I wondered what colour a merengue has... I know white and pink ones. But which one is meant?

Do you mean a meringue? A merengue is a dance, so unless you have synaesthesia, I think you mean the food!

In that case, creamy-white, with possibly a little browning.

it depends. if you buy ready made ones from the supermarket then typically they will be white, but if you get a home made one in a restaurant they will have a slightly golden colour to them as they are baked in the oven. see this example of a baked alaska, a desert covered in merengue and baked.
