These types of dreams are called "Lucid" dreams. We have these types of dreams to basically help us through life. I know that these dreams can be commanded at will, with the dreamer then becoming able to set the scene & alter the outcome. You can buy a dream book specifically on this subject if your interested.

Because "reality" as we perceive it, is entirely a product of our brains. What we see is our brain's interpretation of the light data collected by our eyes not what's actually there. That's why when you have a problem with your brain your experience of reality is altered. Hence those with delusions or hallucinations really believe the most amazing things. Dreams are thought to be the brain's way of processing subconscious thoughts and desires. They seem real because, like reality they are a product of the brain, an electrochemical illusion. We often want dreams to be real because they deal with our deepest desires, often hidden from the conscious mind and it is very satisfying to "see" our dearest wishes fulfilled. The same goes for dreams that are really disturbing, it is our mind trying to work through our worst fears.
If you genuinely have difficulty working out what is real you may have a mental illness and require professional help. Its a lot more common than people think and certainly no reflection on you as a person.

Because dreams are a part of your mind telling the other parts a story - the other parts react this way because they have no physical way of knowing wether the story came from a made up source / part of the mind or from the external senses (eyes & ears). So for the receiver, they ARE real.

i have dreams like that just before i wake up...well that is how it feels to me...i have no idea why...maybe my son is pulling funny faces at me as my mind starts stirring....( he is only 4 )....x
