Sorry - that was a clumsy sentance. I wish to write the following line in an essay '.....following *** years of culinary evolution'.

What I wish to know, is what would be a realistic figure to put? Do we start from BC? Roman? Norman invasion (I'm British)

If you must, then just say "following years of culinary evolution".

The microwave oven, stove & other items have had a finite existance, but evolution has never come to cuisine. In every country in the world, the locals still eat whatever their ancestors ate half of the time (more than half if you include sandwich meals and breakfasts) and italian/chinese/kebab and pals the rest of the time.

Since it was only after the French Revolution that the general populace had the opportunity to taste the creations of French cooks, I would say it depends on the context of your essay.
