Be organized, really, really organized. Apprentice with someone first or go to work at a hotel's catering department, so you learn how to deal with vendors and clients. Learn to network to get new clients. Stay away from weddings: the brides and families are a pain in the neck. Focus on doing corporate events or fundraisers, where the company has resources and the nonprofits have volunteers, so you can get help.
