Is there a font or method?
I know there's a way, by striking the letter P once, but peso sign has two horizontal strikes, and of course i will not want to open photoshop every now and then just to do that

Why don't you do that and make hundreds of copies for the sign? Or better yet put actual pictures of Mexican Pesos on the sign and make the sign a colorful background.

ms word: type P, highlight. then choose format, font, DOUBLE STRIKE through...
"perfect peso" depends on your font-style choice.

Just use a $ sign - it's perfectly acceptable, and in fact that's what they use on their currency.
