In my all electric home, when I turn the thermostat on for cooling the kitchen light comes on and when I turn the thermostat off the light goes out.
10 points for the first one to get right.

This is from an actual service call; two conditions had caused this to happen.
one electrical related and the other hvac related.

The first thing I see in this, is it's not the thermostat that's the problem, because that is a different wiring type, lo-vo , or what we sometimes call comdat/control.
Sounds like when the thermostat starts the cooler, either the blower or the compressor, there is a cross-circuit miswire on the line side of the service power in to the circuit to your line side feed to the kitchen lighting circuit, and a back trace on the line side from the cooler to the ses would find where the circuits are interconnected. The thermostat is acting as a secondary switch and it's the line power to the cooler that is causing this. Line power and neutrals both need to be examined from the cooler.

Sounds like the air conditioner or furnace may possibly be wired in conjunction w/ the kitchen light...

my guess would be an open neutral; if I am correct your house may burn down.
