I mean, are they really recorded live like in a concert or something... I was listening to a "live" album once (from a CD), and also watched the concert (from a DVD), and noticed that they ambient sounds (audience cheering, applauding, etc.) don't match that of the CD.

Yes and no. Many are recorded live, often with parts editted out such as cheering and banter. Some, like KISS's breakthough live album are recorded live, but then heavily added to/changed/etc. in post production, with many parts re-recorded (for Rock n Roll High School the Ramones recorded over everything other than the vocals). The other, much rarer option is that the "live" refers to a live studio track, where the entire song (or even album) was recorded in one take, with everyone playing sumtaneously.

The cheering may not synch up on your CD and DVD because the audio may have been recorded from different sources, eg. the CD straight from the mixing board, and the DVD recording seperately, possibly with additional mics to record the fans to make the experience more engrossing.

Hope this clears up the question, or at least does not over complicate it!

Yes they are. They may be edited to cut out some audience applause or babbling from the band... but yes, live is live.
