My school is currently doing When You Believe from the movie Prince of Egypt and they did Big Girls Don't Cry. Everybody Sang and You Raise Me Up.

It depends on how good your choir is and what type it is (swing choir, women's chorus, etc.).
When I was in school, the formal choir sang "Cantique de Jean Racine" by Gabriel Fauré, which is a higher-level piece. Another group sang "River in Judea," which is somewhat easier.

'Yo le Canto' was a good song that my HS choir sang well.
