The Tsukiji fish market in Tokyo used to be very cool. But now you can't get to the auction area and the activity is down from when I was there 20 years ago. Is it still worth a visit? Has anyone been there since access was restricted in 2005 and was it still interesting?

I think it's worth visiting because of the fresh sashimi you can find there either for lunch or breakfast.
And you can get it at a cheaper price. Thus, it's still worthwhile to visit.
In addition, you can get a feel of their bustling market activity.

I went to visit last year. I thought it was pretty cool. Of course, the sashimi was fresh and delicious for breakfast! Not sure if I would do it again. I wanted to see the auction and that was a disappointment to find out we weren't allowed that early.

20 years ago Japan was also in the midst of its economic bubble, so that was probably one reason it was very lively. But yes, it's worth going to still. It's a daily market so maybe the day you went was just a down day, too?
