If a white cloth turns brown it could be rust, it could be from just the water exposure, or it could be a build up of bacteria. Wash it with bleach to get the bacteria and stains out of it. If it's too yucky, then just throw it away.
As for the scientific part, I don't really know how to explain that. But let me try.
When you cut an apple open, the white part starts to turn brown because of oxidation(oxygen turning the white part brown) you can stop oxidation by putting lemon juice on the white part of the apple and that will keep it white. Maybe your towel is having the same problems? I don't know. lol

oxidation- it's the same thing that causes rust, the transfer of electrons from the fabric of the cloth, or the alloy of the sink, to the air in your home causes a browning of the fabric or those dark, almost rusty looking like patches around a drain or faucet.
