Yuck. Do not watch Naruto or you risk becoming a fully-fledged Narutard.
Anyway, I reccommend Fullmetal Alchemist (it's got a manga and anime form, the manga is the original, but the plots vary a lot.)
Despite what a lot of people think, it isn't just another series with characters that exist just to garner fans--its really got a lot of depth in it with just the right amount of humor.
Or, if serious stuff isn't your type, why not try the series Suzumiya Haruhi no Yuutsu (The Melancholy of Suzumiya Haruhi)? Again, there's a manga and an anime and it's quite hot at the moment. Interesting plot and characters make it an addictive series.

I have not seen anyone mention 'Neon Genesis Evangelion' yet. In my opinion this is simply the best anime series. Every episode had me completely hooked.
The ending is a bit strange. My friend from Japan said not to watch the last two episodes, but watch the film 'the end of evanegelion' instead, this would explain it far better she said.
Basically, the ending was just re-written in the film version (my friend said too many people in Japan complained that the didn't understand the original end). However, I thought the original end made more sense personally. Watch and see what I mean.
There are 26 episodes. You can buy them from (most) good stockists and ebay sometimes. I downloaded each episode.
I highly recommend this anime.

Bleach is my favourite current series (you can download new eps at bleach7.com), with 110 episodes made so far - it's very addictive!
I also like Chobits (not as girly as I had thought it would be) and for a short series that really messes with the head, Paranoia Agent is excellent.
Then Azu-Manga Daioh for sheer silliness :)
